What is better notation to use, single or double?
It is a very long phrase, perhaps two pages like continues...

Much better to do it like the first example. Only use octave signs when the notes would otherwise involve many ledger lines, especially in the lower staff.

I'm glad you answered John. I was going to suggest the same as you, but much better from an experienced pianist (which I am not).
